HACIENDA HUNTING NEAR TEQUILA
Starting early in the day the mist still hangs around Tequila Mountain.
The blue green agave plants are everywhere

SPEAKING OF TEQUILA
Behind an old hacienda was a non boutique operation making Tequila in the old way..
We were invited in to sample the product which was remarkably good tasting.
After about seven years the agave plant is ready and the leaves are discarded leaving the hearts
which are cut top and cooked.
Below– After coming out of the oven the pieces are quite sweet to eat.
Then into a trough where a mash is developed
The mash is evaporated and condensed into this large barrel
Then into this smaller barrel
Then into a bottle or jug.
It did NOT taste like paint thinner as I expected but was instead quite a smooth drink
